Meet St. Mark’s Burgers and Dogs:
What’s the name of your business, and how long has it been since you opened your store in the Village?
St. Mark’s Burgers and Dogs. We’ve been open for just a couple of months.
Why did you choose the Village and St. Mark’s Place?
I’ve always loved the East Village. I’m a former general manager of Tompkins Square Bagels, and Christopher Pugliese, the owner, is one of my best friends for almost twenty-five years.
For the type of food I wanted to create, especially on this block, I thought a hot dog and hamburger place would be a good fit. I want this to be a neighborhood spot. I’m embracing the street’s vibe. Everyone’s been loving the burgers. I couldn’t ask for anything more in terms of the response from our customers, who, even in a short time, have become regulars.
What’s St. Mark’s Burgers and Dogs known for?
We grind our meat fresh, in-house. It’s blended, seasoned, and put through a second grind, which is a finer grind to emulsify the fat.
It’s a delicious burger. It’s not a smash burger—it’s not a flat pancake of crust. It’s not greasy and oily, but it’s extremely juicy—and trust me, there’s fat in there. It’s a very tasty slider, slightly larger than your standard slider. But it’s going back to old-school, classic places like White Manna in New Jersey, which is famous.
And we serve deep-fried hot dogs. We make everything in-house, fresh from scratch. The chili for the chili-cheese dog and disco fries (New Jersey’s answer to poutine) is made from scratch using the same quality ground meat.
We’re just trying to make something old-school, classic, but a little elevated. It’ll be one of the best burgers you’ve ever had.
Where do you find yourself going most in the Village, other than here?
I’m starting a list of my favorite places that I like to go to, some people don’t have stickers. Cello’s Pizza has some of the best pizza in the world, period, hands down. Two Brothers, in the category of cheap pizza, makes some of the best pizza. Loong Noodle, which just opened, is great too.
