Yuco promises to be New York’s first truly haute cuisine restaurant focusing on the traditions, flavors, and ingredients of the Yucatan.  Truly revolutionary in terms of both presentation and food, Yuco combines the best of molecular gastronomy, classic haute cuisine techniques, and traditional Yucatan ingredients and recipes.  Chef Christian Ortiz, a future star in the making, has delivered visually striking food that re-imagines traditional Yucatan flavor combinations.  The black bean and rice amuse bouche is lighter than air and crispy and crunchy, the Flor en Nogada combines spherification of prickly pear juice with walnut cream sauce to form an intense compliment to perfectly fried squash blossoms, and the multiple desserts may be the only desserts in the city that combine intense chilies with perfect dessert undertones to create flavors that have never been experienced before.
